Ingredients
- 1 lb package spaghetti
- 20 uncooked medium shrimp peeled and deveined
- 2 tbsp Olive oil extra-virgin divided
- salt to taste
- black pepper ground to taste
- 2 cloves garlic minced
- 1 small onion minced
- 1 cup skim milk
- ¼ cup half-and-half
- 4 large eggs beaten
- 1 cup grated Parmesan cheese
- 1 tbsp fresh parsley
Instructions
- Large saucepan of lightly salted water should be brought to a boil. Spaghetti should be cooked in boiling water for 12 minutes, stirring regularly, until soft but still firm to the bite. After draining, add the spaghetti back to the saucepan right away.
- Over medium heat, put the shrimp in a large pan. Add 1 tablespoon of olive oil and salt and pepper to taste. For about 5 minutes, cook and stir shrimp until they are mostly opaque. Pasta with shrimp should be covered to keep warm.
- The same pan is used to heat the final tablespoon of olive oil. Add onion; stir-fry and simmer for 5 minutes, or until transparent. Add the garlic and simmer for approximately a minute, or until fragrant. Cook for three minutes or until heated through after adding milk and half-and-half.
- Pour 1/4 cup of the milk mixture into a bowl. Stir in the eggs and heat thoroughly. Add remaining milk mixture after pouring egg mixture over spaghetti and shrimp.
