  • Grapeseed or olive oil
  • 1 cup (115)g cubed Spam
  • 1 tbsp unsalted butter
  • 1 ¾ cups (490)g Baechu Kimchi cut into bite-size pieces 2 tablespoons rice wine vinegar
  • 2 tsp sugar granulated
  • 4 cups (820 g) cooked short-grain rice
  • Kosher salt
  • 4 larg eggs
  • Thinly sliced scallions optional


  • 2 teaspoons oil, heated in a large skillet over medium-high heat Cook, stirring occasionally, until the Spam is brown on all sides, about 3 minutes. Set aside after removing from the pan.
