- 1 cup (115)g cubed Spam
- 1 tbsp unsalted butter
- 1 ¾ cups (490)g Baechu Kimchi cut into bite-size pieces 2 tablespoons rice wine vinegar
- 2 tsp sugar granulated
- 4 cups (820 g) cooked short-grain rice
- Kosher salt
- 4 larg eggs
- Thinly sliced scallions optional

- 2 teaspoons oil, heated in a large skillet over medium-high heat Cook, stirring occasionally, until the Spam is brown on all sides, about 3 minutes. Set aside after removing from the pan.
